LAFASE HE "Grand Cru"
An enzyme preparation with concentrated pectolytic activity,
purified to eliminate anthocyanase activity (4000 FDU 20/g). It is used in
maceration during fermentation. It selectively extracts polyphenols and
high-quality grape tannins with a view to barrel-aging and prolonged
bottle-aging. It improves stability the colouring matter. It increases the yield
of free-run juice.
Dosage: 2 to 3 g / 100 kg grapes according to the type of wine.
