An enzyme preparation with concentrated pectolytic activity
(4000 FDU 20/g). It is used in maceration during fermentation. It accelerates
extraction of grape-skin compounds, in particular fruit aromas, anthocyanins,
and tannins. It improves the extraction
of free-run juice.
Dosage: 2 to 3 kg / 100 kg grapes according to the type of wine.
