ENOFERM ALPHA A single strain of Oenococcus oeni selected from the Bordeaux region by ITV France. Enoferm Alpha is an easy to use freeze dried culture, prepared according to the MBR process. Enoferm Alpha has outperformed other MBR preparations at low temperature and low pH. Enoferm Alpha can be used with confidence in wines at temperatures as low as 15°C. Sensory contribution In addition to performing well under harsh conditions Enoferm Alpha can also make positive contribution to the overall sensory profile of the wine. Unlike many spontaneous malolactic fermentations the varietal and fermentative aromas are not reduced so that wine aromas remains clean and fruity. Vegetal characteristics are reduced and wines fermented with Enoferm Alpha have been judged as softer on the middle palate. |
