LALVIN 31 Lalvin 31 is a Burgundy isolate selected by ITV France. Lalvin 31 has consistently outperformed other direct inoculum cultures under high alcohol conditions. The strain has performed well with ethanol levels in excess of 15.5%. Lalvin 31 also performs well under low pH conditions. In wines with pH as low as 3.1 where an acid reduction through malolactic fermentation is desirable, the Lalvin 31 strain performs well. Sensory contribution Lalvin 31 has been chosen not only for high activity but also for its interesting flavour characteristics. It contributes completely towards mouthfeel, fruit expression and tanin structure. Chardonnay wines fermented with Lalvin 31 have been described as expressing " typical fruit with light buttery notes, enhanced body and good palate length". Flavour contribution to red wines was described as " an increase in berry flavours, good tanin structure and increased mouthfeel". |
