PRODUCT FACILITATING CONTROL OF TURBIDITY OF MUSTS, IN ORDER TO OPTIMIZE THE FERMENTATION PROCESS AS WELL AS AROMATIC CHARACTER ON WHITE AND ROSE WINES.

Many experiments conducted on white wine fermentation have shown the desirability of juice clarification prior to fermentation. They have as well revealed that juices with too low turbidity present problems, mainly difficulties in fermenting to the finish; and increase in volatile acidity.

 

The best results are obtained on must with a turbidity between 100 and 200 NTU.

As it is practically very difficult to adjust turbidity without a nephelometer, GRANUCEL brings an alternative solution.

Granucel is acting toward the yeasts as a support in the clear juice. It promotes their growth and guarantees a smooth fermentation process.

2.    Directions For Use

Granucel has to be added to clarified must, after sedimentation of the lees or after centrifugation, at a dosage of

100 to 500 mg / litre

It is also advisable to add GRANUCEL on juices with a high sugar content to facilitate the fermentation process.
