Enoferm M2

Isolated in Stellenbosch, South Africa, Enoferm M2 is used as a general purpose wine yeast. Killer active, will ferment between 15 to 38°C to 15 percent (v:v) alcohol. Neutral to low aroma producing yeast, a medium rate fermenter producing wines that can be distinguished by mouth feel and taste. Accumulates greater than normal concentrations of succinic acid and is sensitive to sulphur dioxide at pH 3.2 or lower.
