Burgundy isolate for barrel or tank fermentation of chardonnay for maturation or as a component of blends. Killer active, short lag time, alcohol tolerant to 14 percent (v:v) and optimum temperature 15 to 32°C. Rapid development of flavours on lees described as toasted bread, honey, hazelnut and almond.
