1 - ORIGIN:

 

J. LAFFORT & Cie selects ACTIFLORE Cerevisiae because of its quick starting ability and its neutral fermentation characteristics into the wine.

 

 

2 - CHARACTERISTICS:

 

 

Ä ACTIFLORE Cerevisiae is recommended  to start a fermentation into a non-controlled indigenous yeast environment .

           

            Ä ACTIFLORE Cerevisiae ferments from 12°C upward.

 

            Ä ACTIFLORE Cerevisiae can ferment up to 13 % alcohol/vol.

 

            Ä The ACTIFLORE Cerevisiae yield of transformation of sugar into alcohol is around 16,8 g per 1% alcohol/vol.

 

            Ä ACTIFLORE Cerevisiae produces a low level of volatile acidity.

 

            Ä ACTIFLORE Cerevisiae produces a low level of H2S.

 

            Ä ACTIFLORE Cerevisiae produces a low level of pyruvate acid.

 

            Ä ACTIFLORE Cerevisiae produces around 25 mg/l of SO2.

 

 3 - DIRECTION FOR USE:

 

100 to 200 mg of ACTIFLORE Cerevisiae per liter of must.

 

 

 

 Mix 1 Kg of ACTIFLORE Cerevisiae and 1 Kg of sugar to 10 liters of water at 40°C.

 

Leave for 20 Min, then stir slowly. The yeast is ready for use. The addition is carried out by introducing directly into the fermenting tank and by homogenizing. After rehydration, avoid a temperature difference of more than 5°C between the prepared yeast and the must that is to be inoculated.
