SACCHAROMYCES CEREVISIAE - STRAIN F15

 

 

Specific yeast of red wines, producing aromatic, round and structured wines.

Thanks to its fermenting characteristics, ZYMAFLORE F15  is very well adapted to the vinification of :

- grapes coming from young vines,

 - grapes from warm area vineyards,

due to its high production of glycerol.

 

 

 

1 - ORIGIN :

 

ZYMAFLORE F15 has been isolated and selected by the Faculty of Oenology of Bordeaux.

 

 

2 - PROPERTIES :

 

 

            A - Fermenting characteristics :

 

 

            Ä Very good implantation in the must.

            Ä Very good fermenting kinetic.

            Ä Good resistance to high temperature and heat shocks.

            Ä High alcoholic fermentation potential : up to 14,5 % vol.

            Ä Low production of volatile acidity.

            Ä High production of glycerol.

 

         

           

B - Oenological characteristics :

           

Ä Very good enhancement of the polyphenolic potential of the grapes, masking the reactivity of the tannins, thanks to its glycerol production and the extraction of the proteins and the polysaccharides.

            ÄVery good revelation of the varietal expression of the grapes.

 

3 - CONDITION FOR USE :

 

            ZYMAFLORE F15 is recommended for the elaboration of quality red wines with high alcoholic degrees. ZYMAFLORE F15 is easy to ferment making full, round and balanced wines.

 

            A - Dosage :

           

10 to 20 g/100 kg of grapes.

 

            B - Application :

           

Mix 1 kg of ZYMAFLORE F15 and 1 kg of sugar to 10 litres of water at 40°C.

 

Leave for 20 Min, then stir slowly. The yeast is ready for use. The addition is carried out by introducing directly into the fermenting tank and by homogenising. After rehydration, avoid a temperature difference of more than 5°C between the prepared yeast and the must that is to be inoculated.
