A combination of
nutritive elements that :
• contributes amino acids and growth factors (absorbed nitrogen in the form of
ammonium salts, vitamin B1, etc.) at the beginning of fermentation to optimize
yeast growth ;
• contributes survival factors (long chain fatty acids, sterols, etc.) that
facilitate completion of fermentation ;
• fixes fatty acids (C8-C10), thus reducing the risk of stuck fermentation.
It is used preventively, added at the same time as the yeast.
Dosage: 30 to 45 g/HL (10 g/HL represents approximately 15mg/L available
nitrogen).
